Pollo Vesuvio (Chicken Vesuvio)

Happy Thanksgiving! I know today is turkey day but its been a while since I last posted so I wanted to share this delicious Italian chicken recipe my boyfriend made a few times for me. He found it on OrsaraRecipes on Youtube.


Pearl onions

Peas (frozen or fresh)

Potato (Yukon gold or the like)

Chicken thighs, bone-in and skin on

Thyme (fresh and chopped)

3 garlic cloves

Olive oil

salt and pepper


Preheat oven to 400F

In a bowl, mix potatoes, thyme, olive oil, salt, and pepper.

In a sauté pan, brown chicken in olive oil until skin is crisp, remove and set aside.

In same sauté pan, add potatoes and cook until warm.

In oven safe pan, add chicken and potato mix. Cook for 35 minutes.

Remove and add peas, cook for 10 minutes more.
